#weliketoeat : Brown Sugar Butterscotch Cookies
Hello again! Hopefully you had a wonderful Thanksgiving spent with family, friends and loved ones eating entirely too much turkey and pumpkin pie. I know I did.
So without any further delay, here’s today’s amazing recipe that I just recently discovered. I didn’t even know that I liked butterscotch but hey, it’s pretty fantastic.
Brown Sugar Butterscotch Cookies
3/4 cup butter [one and a half sticks], softened
3/4 cup brown sugar
1/4 cup white sugar
1 teaspoon vanilla
2 cups flour
1 small box Jell-O butterscotch instant pudding
1 teaspoon baking soda
1 bag butterscotch chips
coarse sea salt for sprinkling
Preheat oven to 350 degrees.
In a large bowl, cream together butter and sugars. Mix in vanilla and egg until smooth.
In a medium bowl, whisk together flour, butterscotch pudding mix and baking soda. Add dry mixture to wet ingredients and mix until combined. Stir in butterscotch chips.
Bake 10-12 minutes on parchment paper lined baking sheets. Immediately after removing from the oven, sprinkle cookies with coarse sea salt. Allow to cool completely on the baking sheet and then store in an airtight container.
I used Imperial as opposed to butter. It’s 53% vegetable oil but I think it’s amazing for baking with.
I found that baking the cookies for 11 minutes was absolutely perfect – not too crunchy around the edges but still super soft and chewy in the middle.
They smell AMAZING. Trust me on this one. Or don’t. Make your own and come to your own conclusion, but don’t say I didn’t warn you. Hopefully you enjoy them and just remember that sharing is caring.
