#weliketoeat : Roasted Asparagus
I figured that since I’ve posted so many not-so-healthy recipes recently like cookies and sugar-filled snacks, it would be a good idea to post something a little healthier.
I never knew I liked asparagus. Jon did [and raved about it!] so I agreed to give it a try. I searched the Internet and Pinterest for tips on the best way to make it. I tried a few out and there’s one way that I just keep coming back to because it is amazing. Amazing. And easy!
Garlic Salt or Crushed Garlic Flakes
Sea Salt [optional]
Cracked Black Pepper [optional]
Preheat the oven to 425 degrees.
Clean and rinse the asparagus and line up on a cookie sheet lined with parchment paper.
Lightly drizzle olive oil over the asparagus and sprinkle with the salt, pepper and/or garlic.
Place in the oven for 18-20 minutes.
Remove from oven, sprinkle with cheese and put back in the oven for 3-5 minutes.
I use garlic, salt and pepper but I like a lot of flavor.
When I say lightly drizzle, I mean lightly drizzle with olive oil. It seriously doesn’t need a lot and you don’t want it to be soggy.
A tip for asparagus that I learned somewhere along the way – when you’re washing it, if you hold the stalk between your two hands and lightly bend it, it will naturally break where it is healthy. This way you don’t have to chop it all. I just go from washing to snapping apart to the pan. Voila.
This recipe [if you can call it that!] works wonderfully for a ton of different veggies. I’ve used the same steps with red, orange and yellow peppers and am dying to try it with tomatoes, even though the mister won’t eat them. I love veggies and I feel like this is a quick, easy way to prepare them, especially if you’re busy making something on the stove.
