#weliketoeat : Buffalo Chicken Lettuce Wraps

Without any further delay, here’s this week recipe!
Jon & I are attempting to make healthier choices but there are certain things I am not willing to budge on. One of them is flavor!
I decided to make buffalo chicken wraps but to use lettuce instead of tortillas. I picked up some super leafy green lettuce [the actual description on the bag] along with some carrots, cucumbers & grape tomatoes as accents. Here’s the way they came together.
Buffalo Chicken Lettuce Wraps
5-6 chicken tenders or 2-3 breasts [thawed or fresh]
Buffalo or hot sauce
Cucumbers [chopped or diced]
Super leafy green lettuce or iceberg lettuce
Shredded cheese [optional]
Cook the chicken with a plethora of hot sauce until thoroughly cooked.
Dice and chop all the veggies.
Wash and spread out the super leafy lettuce.
Fill the lettuce with chicken and veggies and wrap up similar to an eggroll. Dip in ranch or additional hot sauce.
I like to cut up my raw chicken and let it marinade in a mix of buffalo sauce with a touch of ranch dressing for a couple hours before cooking it.
I specifically use Frank’s Hot Sauce because I love the way it’s super spicy saucy.
You could use any veggies but I am a huge fan of carrots and cucumbers. And I love tomatoes.
Iceberg lettuce might work better as a wrap because the super leafy green lettuce was a little bland in flavor and wasn’t strong enough to actually hold everything inside. Hence the third photo which just shows everything a little layered and stacked.
While I am always one to encourage the use of cheese, I can honestly say that adding cheese [freshly shredded colby jack] didn’t add a huge element of flavor to the wrap.
These wraps were super delicious and while they weren’t super healthy, I’m sure they were way more healthy than using tortillas. That’s my story and I’m sticking with it.
