Keeping on trend with the rest of this week, today I’m sharing one of my all time favorite fall recipes! Pumpkin Spice Cookies!
When I was a kid my mom made some amazing Pumpkin Cookies so I borrowed her recipe, made a few tweaks and then added the not-so-secret ingredient : Hershey’s Pumpkin Spice Kisses. I found mine at Target but they’re only available for a limited time so I would suggest stocking up now. Plus, they’re great for snacking on!
Pumpkin Spice Cookies
1 cup brown sugar
1 cup white sugar
1 1/2 cups margarine [or butter]
1 small can of pumpkin [the can I used was about 15 ounces]
1/4 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon ginger
3/4 teaspoon nutmeg
3/4 teaspoon ground cloves
2 1/2 – 3 cups flour
1 bag of Hershey’s Pumpkin Spice Kisses
Preheat oven to 350 degrees.
Cream margarine and sugars. Add eggs and pumpkin and beat well. Blend in dry ingredients.
Drop by tablespoon onto ungreased cookie sheet.
Bake for 15 minutes.
Remove from oven and top with a pumpkin spice kiss [they will become melty very quickly!]
Move to parchment paper or foil and wait to cool.
Makes about 6-7 dozen cookies. These cookies are very soft and cake-like, perfect for a fall day!
I made these earlier this week and took some to work. They didn’t last long. Even Jon [who hates all things pumpkin, crazy-I know] enjoyed them. If you try them out, let me know your thoughts!
